The primary role of the Chef is to provide high quality and nourishing meals for all guests and staff at Union Glacier. Meals are hot, buffet style breakfast, lunch and dinner plus baked goods and snacks between meals for up to 160 clients and staff. Chefs also play a key role in creating prepared food for our remote camps, aircrafts, and special projects.

Antarctic Logistics & Expeditions (ALE) is the most experienced deep-field operator in Antarctica, providing a wide range of guided experiences, air support, logistical back-up and safety cover for governmental research programs, independent expeditions, and tourists. We work in a worldwide market of different cultures and languages, and we fully embrace this diversity. We also have a strong environmental ethic. ALE is a Utah company with a year-round office in Salt Lake City, a seasonal operations support office in Punta Arenas, Chile, and several seasonal field camps in Antarctica.

Seasonal Information

Chefs generally work from November to January.

Duties and Responsibilities:

Responsible for the provision of culinary needs to all personnel in camp by planning menus and adapting for dietary restrictions; cooking meals and snacks; baking bread, cakes and making deserts; providing inflight food and snacks for passengers and aircrew.

Responsible for food preparation on aircrafts, remote camps, and special projects by serving snacks at the runway to flight passengers; preparing inflight sandwiches and snacks for passengers and aircrew; preparing and packing frozen field meals, bread, and cake.
Follows professional standards of food preparation, presentation, and safety protocols.
Participates in general kitchen duties such as cleaning; sorting trash, recycling, and organic waste; organizing food storage areas; washing dishes; maintaining stock levels; taking inventory; and assisting in making weekly food orders.
Participates in a variety of hands-on general remote camp activities such as shoveling snow, melting snow, organizing stock/inventory, unloading and loading aircrafts, monitoring camp for safety issues during weather events, attending staff meetings, reporting hazards, completing reports and other end of season tasks

Minimum Qualifications:

Chef's must have a Culinary or Cookery qualification, previous professional Chef experience, possess a current Food Safety and Food Hygiene Certificate prior to employment, and have a valid passport.

All workers in Antarctica are required to be fluent in spoken and written English, physically fit and comfortable with physical labor, possess a valid passport, have the ability to live in a cold-weather environment, successfully pass a medical questionnaire reviewed by the Medical Director, and obtain a First Aid, CPR & AED certification prior to employment.

Compensation and Benefits

Chefs make a minimum of $200 per day and may be eligible for a higher rate depending on qualifications, certifications, and previous experience.

Benefits include food and lodging, travel expenses, industry pro-deals, paid training and accommodations at our seasonal logistics hub in Punta Arenas, Chile, and medical services provided by our Medical Team located at Union Glacier Camp.

The Chef is a Seasonal Contractor position.

Physical Requirements

This position involves medium work that primarily involves standing for long period of times. This position may exert up to 50 pounds of force occasionally and/or up to 20 pounds of force frequently and/or up to 10 pounds of force constantly to move objects.

Incumbents in this role typically require standing for prolonged periods; communicating with others to exchange information; repeating motions that may include wrists, hands and or fingers; shoveling; assessing the accuracy, neatness and thoroughness of the work assigned. Incumbents may be subjected to extreme temperatures, sharp objects, and travel.

COVID Vaccine Requirement

In accordance with international travel regulations, all staff that are working or may be traveling to Chile or Antarctica must be fully vaccinated against Covid-19 (SARS-COV-2).
